We’ve all been told pistachios are good for your heart. Aronia Berries are great antioxidants. What if we combined those two for a seasonal treat – we’d get healthy fudge, right?
One of our favorite, easy to make holiday treats is Aronia/Pistachio White Chocolate Fudge.
I made a batch recently to share with friends and neighbors. It always gets rave reviews and it’s something different. I bet they won’t get duplicates!
The ingredients are simple and so is the process. It’s a quick and easy fudge and you don’t need to use a candy thermometer!
Spray (or line with foil) a pan. It makes a 9 x 9 pan full of thick fudge. I used a 7 x 11″ pan here I’d sprayed.
Begin by using a 2 quart saucepan on low heat. Pour in the can of Sweetened Condensed Milk. Add 3 cups of white chocolate chips. Melt over medium heat until smooth and creamy. It will be thick.
Add 1 tsp vanilla and 1/8 tsp salt and stir well. Mix in 3/4 cups of shelled pistachios and 1 cup of dried Aronia berries. Stir together and pour into the prepared pan.
Refrigerate or let sit until firm and ready to sample or cut and share.
